When I run out of ideas and just want something quick for lunch this is one of my go to recipes. My kids love vegetables so this is a perfect lunch or dinner for everyone. I always make it a little different but I tried to come up with a super simple recipe. This stir fry is quick, easy and delicious!
Ingredients:
-2 boneless chicken breasts or thighs (thawed and cut into bite sized pieces)
-1 bag frozen stir fry vegetable mix(you can use half of the bag depending on the amount of vegetables you want)
-2 tablespoons of honey bar b q sauce
-2 tablespoons of soy sauce(reduced sodium)
-1/4 teaspoon ground ginger
-1/2 teaspoon garlic powder
-salt and pepper to taste
-2 tablespoons olive oil
Heat oil in pan on medium/high heat. Season chicken pieces with salt and pepper. When oil is ready place vegetables and chicken together in pan. Then add the bar b q sauce, soy sauce, ground ginger, garlic powder, salt and pepper and stir. Lower heat to medium, cover and let cook for 15-20 min or until chicken is thoroughly cooked and vegetables are tender. Adjust salt and pepper if needed.
****Make a bed of rice to pair with your stir fry! I like brown minute rice. Just follow directions and serve.
